Mac & Cheese with Fresh Peas, Cauliflower and Toasted Garlic Breadcrumbs
You know it’s the start of fall when you start to crave warm comfort food! This mac & cheese recipe is creamy and comes with a few surprising additions—and a crispy garlicky topping. Pair with your favorite Temecula Valley Chardonnay or Merlot.
Serves 6
Ingredients 2 tablespoons (30g) unsalted butter 2 tablespoons (30ml) all purpose flour 1 cup (240ml) whole milk 1 cup (240ml) half-and-half 1¼ cup (143g) grated sharp cheddar cheese ½ cup (56g) grated Gruyere cheese 6 cups cooked macaroni (made from 10 ounces/284g dry macaroni) ½ teaspoon (2.5ml) sea salt 2 tablespoons (30ml) extra virgin olive oil 2 cups (200g) cauliflower florets, cut into small pieces ½ cup (80g) fresh or frozen peas
For the topping: 2 cups (128g) fine dry breadcrumbs (preferably Panko) ½ cup (56g) grated sharp cheddar cheese 2 tablespoons (30ml) extra virgin olive oil 2 teaspoons (10ml) minced garlic ½ teaspoon (2.5ml) sea salt 1 teaspoon (2.5ml) freshly ground black pepper
Directions Preheat oven to 375° F (190° C)
Melt the butter in a large, heavy-bottomed, saucepan over medium heat, until sizzling. Add the flour and cook for 30 seconds, stirring constantly.
Gradually stir in the milk and half-and-half, and continue to stir until the sauce thickens and begins to simmer.
Turn off heat, stir in the grated cheddar and the Gruyere until smooth. Fold in the macaroni and ½ teaspoon (2.5ml) salt. Set aside.
Heat 2 tablespoons (30ml) olive oil in a large, heavy-bottomed skillet over medium-high heat until hot but not smoking. Add the cauliflower and cook and stir until lightly browned. Stir in the peas and cook for 2 more minutes.
Mix the cauliflower and peas with the macaroni and spread in a buttered 9-by-13-inch (23-by-33-cm) baking dish.
To make the topping, mix the breadcrumbs, cheddar cheese, olive oil, garlic, salt and pepper in a small bowl.
Sprinkle the mixture evenly over the macaroni.
Bake in the preheated oven for 20 minutes or until topping is golden brown.

Oak Mountain Winery 2018 Chardonnay ~ This chardonnay is lightly oaked with French oak imparting rich flavors of vanilla, butterscotch, creme brulee and caramel.

While the weather this year has taken a little bit longer
than usual to get its act together, and brought lots of rain along with it, the
sun is finally starting to heat things up, shorts are moving from the back of
the dresser drawer to the front, and grape vines are looking green and full.
You know what this means? It’s officially summer wine time.
Temecula Valley Southern California Wine Country is
certainly known for its rich, full-bodied red wines. However, it’s also home to
some pretty incredible whites, rosés, sparkling wines and lighter-style
reds. Here’s a few of our favorites for sipping out on the patio on a warm
summer afternoon, or while backyard grilling with your friends… or for any
occasion, really.
Why we love it: This crisp, clean, bone-dry bubbly is made
in the méthode
Champenoise, AKA how they do it in the most famous sparkling wine region of
the world, Champagne. Made from 100% Chardonnay grapes, it’s light but remarkably
complex, with golden delicious apple, apple blossom and toasted brioche on the
nose, teensy little bubbles, and a tight, persistent finish. Ring in the 4th
of July with this beautiful bottle, or simply pop it while you celebrate your
own heartbeat all summer long.
Why we love it: Oak Mountain has taken Temecula Valley
Roussanne – one of the Rhône Valley’s signature white grapes – and made it sparkle.
The result is a pleasantly floral, fresh wine that is delightful as an aperitif
or paired with a wide range of cuisines. The beauty of bubbles is they go with
just about everything… including nothing at all but the sun on your face and
the breeze in your hair.
Why we love it: Close your eyes and you are in Italy with
this bright, juicy Vermentino, a grape that is equally at home in Temecula as
it is in Sardinia, Liguria and Tuscany. Notes of ripe, fleshy stone fruit, lime
zest and white flowers give way to a clean, oyster shell finish. The very
definition of “quaffable.”
Why we love it: Viognier shines in Temecula Valley and this
bottling is no exception. While Viognier can at times be heavy, luscious and
slightly oily, Doffo Winery has captured all of the floral aromatics of the
grape variety while maintaining citrusy freshness and a delicate minerality
thanks to fermentation in concrete tanks. The result is a light, clean, elegant
wine that belongs on your summer dinner table.
Why we love it: Don’t let the deep, almost magenta color
fool you – this rosé, made from 100% estate Zinfandel, is light on its feet
and bursting with juicy strawberry, red currant, and watermelon Jolly Rancher
notes giving way to a totally dry, lime zest finish. Pair this with cedar
planked salmon and a sunset.
Why we love it: Sipping this wine, you could be strolling
through Provençal lavender fields with a straw hat and a picnic. We would
argue Temecula Valley is just as pretty, and this wine just as perfect as any
rosé
we’ve tried from Provence. Pale, baby pink in color, with notes of warm, ripe
strawberries and raspberries, violet petals and an elegant, wet river stone
finish. This is one we could drink all day and well into the night.
Why we love it: Another example of how well Italian grape
varieties thrive in Temecula Valley. This Montepulciano is surprisingly
light-bodied, with bright red fruit, a touch of baking spice and a soft, warm
finish, like the lingering sunshine as you recline in a hammock with a good
book at the end of a mid-summer day. A wine made that practically begs for food,
you could even try serving this with a very slight chill on it.
Why we love it: If you simply must have a rich, complex red,
even during the hottest summer months, then Baily Winery is your go-to for
highly structured, elegant red wines. Meritage is their flagship bottling, and
they have a library selection that dates back over a decade. A stunning blend
of classic Bordeaux grape varieties, this wine is lean but powerful, with ripe
berry fruit, plum, sweet baking spices and an intriguing tobacco note.
While all of these wines can be purchased online or direct
from the winery, the summer months are a fantastic time to visit Temecula. With
plenty to do, from wine tastings to concerts, festivals, hot air ballooning and
more, you are sure to find enough to fill several days in Southern California

This recipe couldn’t be more perfect for a Father’s Day or summer BBQ. And chances are, you’ll find many other uses for this fragrant sweet-tart jam. Enjoy it on a grilled-cheese or ham sandwich or serve it with a cheese or charcuterie board. It’s the perfect complement for fresh goat cheese or a tangy Cheddar. Serve it with grilled sausages and pair with your favorite Temecula Valley Cabernet Sauvignon or Syrah.
Ingredients ¼ pound (125 g) dried Calimyrna figs, stems removed 2 tablespoons extra virgin olive oil 1 large yellow onion, about 10 ounces (315 g), halved and thinly sliced from root to stem 1 teaspoon minced fresh thyme ½ teaspoon ground fennel seed Kosher or sea salt and freshly ground black pepper 1 tablespoon sherry vinegar, or more to taste 4 fresh Italian sausages, hot or sweet, 5 to 6 ounces (155 g to 185 g) each
Directions Put the figs in a small saucepan with 1 cup (8 fl oz/250 ml) water. Bring to a simmer over medium heat and simmer for 2 minutes. Cover and set aside for 30 minutes.
Heat the olive oil in a large skillet over medium-low heat. Add the onion, thyme, and fennel seed. Season with salt and pepper. Cook, stirring often, until the onions are soft, golden-brown, and sweet, about 30 minutes. Lower the heat if necessary to prevent burning.
While the onions cook, prepare a medium-hot charcoal fire or preheat a gas grill to medium-high.
Lift the figs out of the liquid with a slotted spoon and slice thinly. Add the figs to the onions, along with the sherry vinegar and 2 tablespoons of the fig-cooking liquid. Cook, stirring often, until the liquid has been absorbed and the flavors have merged, 3 to 4 minutes. Taste for seasoning. The jam should be moist with a balanced sweet-tart flavor.
Grill the sausages until they are nicely browned all over and feel firm when probed, about 10 minutes. Serve immediately with the warm jam.

Temecula Valley vintners were proud to introduce the latest Hall of Fame inductee at the 36th Annual Grape Day conference held on April 18, 2019 at South Coast Winery in Temecula, California. The inductee honored was the late Ben R. Drake, owner of Drake Enterprises, Inc., a Temecula-based farm management company, and a long-time board member of the Temecula Valley Winegrowers Association.
The Temecula Valley Winegrowers Hall of Fame was
introduced in 2016 by Phil Baily, owner of Baily Winery and current President
of the Board for the Temecula Valley Winegrowers Association (TVWA). The first
inductees into the Hall of Fame were Vince & Audrey Cilurzo and John
Moramarco. At the time, Baily noted “The recent passing of wine country pioneer
Vince Cilurzo prompted the TVWA Board of Directors to consider ways we could
honor his memory. In discussing this, we realized that other pioneers should be
recognized, most notably Audrey Cilurzo, because Vince and Audrey partnered in
their accomplishments. John Moramarco was unquestionably the key leader of our
rise in the 1960s and for the following thirty-plus years.”
Since that time, the association’s Board of
Directors has inducted the late John Poole and his son, Peter Poole, who
founded and operated Mount Palomar Winery for over two decades, as well as Ely
Callaway, founder of Callaway Vineyard & Winery and of Callaway Golf
fame.
“This year’s Hall of Fame inductee was similarly
accomplished and very well respected within Temecula Valley’s wine community
and we’re very appreciative of his effort on behalf of all of us,” stated Phil
Baily. Ben’s long service as a member
and Chairman of the California Association of Winegrape Growers, and his
service as a state-wide leader in the fight against Pierce’s Disease
brought recognition and respect to our Valley. To many in our
industry, Ben was Temecula. He was one of the three or four key players
who did the most to grow the reputation of the Temecula Valley Wine
Country.”
Ben was a fifth-generation farmer in Riverside
County and a resident of Temecula since 1973. Ben founded Drake Enterprises,
Inc., 40 years ago. They currently manage 750 acres of avocados and 450 acres
of winegrapes in the Temecula Valley.
Ben passed away this past November.
Ben accomplished much in his professional career,
including being a long-time Board member and President of the Temecula Valley
Winegrowers Association, President of the Rancho California Water District
Board of Directors, Past Chairman of California Association of Winegrape
Growers and Past President of Riverside County Farm Bureau, just to name a few.
When asked about Ben’s contributions to Temecula’s
thriving wine region, the TVWA’s Executive Director, Krista Chaich said, “It’s
hard to know where to start when talking about Ben’s contributions to the success
of Temecula Valley Wine Country. He was a tremendous leader and an ardent
supporter of our wine region. Most notably, his leadership and guidance were
never more apparent than when our winegrape growers were faced with the
devastating loss of vineyards due to Pierce’s Disease, a bacterial infection
that nearly wiped out our wine country. Ben called upon the State of California
to assist in the fight against Pierce’s Disease through significant funding and
helped to set up task forces and treatment and research programs. Many of us
believe that had it not been for Ben’s efforts, our wine country wouldn’t be
the thriving and award-winning wine region that it is today. Ben’s wife, Sharon, his daughters Katie and
Courtney, his son-in-law JD Harkey, his three grandsons and his long-time
assistant, Kathleen were on hand to accept the award on Ben’s behalf.

Slice this frittata into thin wedges for a passed hors d’oeuvre or serve more generous portions with a tuft of salad as a first course. Ingredients ½ pound (250 g) fingerling potatoes 1-1/2 tablespoons plus 1 teaspoon extra virgin olive oil Kosher or sea salt 6 large eggs Freshly ground black pepper 2 tablespoons chopped fresh dill, plus more for garnish 1 tablespoon thinly sliced fresh chives ¼ pound fresh Dungeness crabmeat
Directions Preheat the oven to 425°F (220°C). Put the potatoes in a baking dish just large enough to hold them. Drizzle with 1 teaspoon olive oil, season with salt, and turn to coat with the oil and salt. Bake until tender when pierced, 15 to 20 minutes. Let cool, then slice into ½-inch (12 mm) pieces. Reduce the oven temperature to 400°F (200°C).
In a bowl, whisk the eggs with ½ teaspoon salt, several grinds of pepper, and the dill and chives. Stir in the crabmeat and potatoes, reserving a few larger pieces of crab for placing on the surface of the frittata later.
Heat a 10-inch nonstick skillet over medium-low heat. Add the remaining 1-1/2 tablespoons olive oil. When it is hot, add the egg mixture and use a rubber spatula to distribute the crab and potato evenly. Cook without stirring for about 2 minutes, until the eggs begin to set, then place the reserved chunks of crabmeat on top. Continue cooking without stirring until the frittata is about two-thirds set, with some patches of liquid egg on the surface. Transfer the skillet to the oven and bake until the surface is firm to the touch, about 6 minutes longer.
Remove from the oven and slide the frittata onto a cutting board. Let rest at least 15 minutes. Garnish with chopped dill, then slice into wedges and serve. The frittata is best warm, not hot.
