2017 Temecula Valley Winegrowers Hall of Fame

Temecula Valley vintners were excited to introduce the latest Hall of Fame inductees at the 34th Annual Grape Day conference held on April 13, 2017 at South Coast Winery in Temecula, California. The inductees honored were John Poole and Peter Poole.

The Temecula Valley Winegrowers Hall of Fame was introduced in 2016 by Phil Baily, owner of Baily Winery and member of the Temecula Valley Winegrowers Association (TVWA) Board of Directors. The first inductees into the Hall of Fame were Vince & Audrey Cilurzo and John Moramarco. At the time, Baily noted “The recent passing of wine country pioneer Vince Cilurzo prompted the TVWA Board of Directors to consider ways we could honor his memory. In discussing this, we realized that other pioneers should be recognized, most notably Audrey Cilurzo, because Vince and Audrey partnered in their accomplishments. John Moramarco was unquestionably the key leader of our rise in the 1960s and for the following thirty-plus years.”

Vincenzo and Audrey Cilurzo planted the first commercial wine grape vineyard in the Temecula Valley. They established Cilurzo Vineyard and Winery as one of the first wineries in the Temecula Valley. As husband and wife, they championed the growing of red wine grapes, most notably Petite Sirah. They offered help, encouragement and support to all the wineries that followed them.

John Moramarco planted one of the first commercial wine grape vineyards in the Temecula Valley in 1968 while working for Brookside Winery. In the late 1980s his efforts helped Riverside County create the citrus/vineyard zone which preserved agriculture and laid the foundation for the remarkable growth of wineries over the ensuing years. Moramarco also worked to mobilize Riverside County, the City of Temecula, State and Federal efforts to successfully combat the spread of Pierce’s Disease in Temecula Valley vineyards.

“This year’s Hall of Fame inductees were similarly accomplished and well respected within Temecula Valley’s wine community and we’re very appreciative of their efforts on behalf of all of us,” stated Phil Baily.

John Poole purchased vineyard land in the Temecula Valley in 1969, establishing Long Valley Vineyards, which eventually grew to 165 planted acres. Additionally, he planted one of California’s earliest Syrah vineyards in 1974. John founded Mt. Palomar Winery in 1975; this was Temecula’s second winery. In 1978, he opened the first permanent tasting room and was the first to begin advertising the Temecula Valley as a tourist destination.

Peter Poole, John’s son, was a founding member of the South Coast Vintners Association, a predecessor of the Temecula Valley Winegrowers Association. He served many years as the President and Board Member of the Vintners Association and its successor. Peter took over operation of Mt. Palomar Winery in 1985, making it the first winery in the Temecula Valley under second-generation leadership. For many years, he worked to improve viticulture and winemaking practices in the Valley. He was instrumental in the effort to change the official name of the American Viticulture Area (AVA) from Temecula to Temecula Valley. He pioneered the planting of Italian varieties in California, being the first to plant Cortese in California and Sangiovese in the Temecula Valley. When the area was under siege from the vine destroying Glassy-winged sharpshooter, Peter helped lead the successful fight against the pest and the spread of Pierce’s Disease in the Temecula Valley.

How to Properly Chill & Open Sparkling Wine

If you’re reading this, the chances are good that you’re cheering for, and with, bubbles. Sparkling wine has arguably never been a more popular beverage choice, especially in the U.S. The Wine Institute reported that in 2015, Champagne and sparkling wine sales in the U.S. grew by two million cases, topping off at an incredible 21.7 million cases that year.

You might be a bit shocked to learn, however, that the iconic imagery of celebrating major life events with the loud pop of a Champagne cork flying across the room has got it all wrong, at least when it comes to the best way to enjoy your bubbly-drinking experience. And if you’re like most of us, the bottle of sparkling wine at the end of that cork is being served too warm, too. Yeah, we know, we’re party poopers, but we’re trying to help you out, here.

While a cork-turned-flying-projectile is admittedly kind of fun, there are better ways of ensuring that your celebrations include getting the best out of the bottles of bubbly on which you spent your hard-earned cash. Those start with knowing the best way for chilling your sparkling wine (hint: it involves salt), and the best way to open it once it’s cooled down (hint: it’s not supposed to be noisy).

Here’s a primer on chilling and opening your bubbles, with an overview of the science behind it, for those of you who are skeptics at heart, and in case you want to impress your friends with your wine knowledge.

Chilling it Out
Due to its carbonation, sparkling wine generally tastes best when it’s served colder than most other wine styles. Typically, this is in the 43–48 degrees F (6–7 degrees C) temperature range. A lower temperature also slows down the molecular activity in the bottle, making it safer to open; warmer carbonated liquid tends to foam up more – which can make a mess. So, in a way, chilling sparkling wine is actually the first step in properly opening it.

You can achieve this chill-down by putting your bubbles into the refrigerator, but that takes about three hours, and mostly kills the romance associated with whipping out a bottle of celebratory sparkling wine. The quickest way to get your sparkling wine to the right serving temperature – usually getting the trick done on a 750 ml bottle in 20 minutes or less – is by using an ice bucket, ice, water, and salt.

First, fill the ice bucket about halfway with ice and water. This is the most important step in chilling the wine, and the one that even some seasoned professionals sometimes miss. A mixture of ice and water will chill down your sparkling wine much more quickly than ice alone. For that, we can thank the laws of thermodynamics (you know, the stuff you slept through during science class in high school). For the wine to cool, it needs to transfer its heat to its surroundings; the colder the surroundings, the more quickly it can do this. Ice, of course, cools the area around the bottle, but ice alone will have many air pockets between the ice cubes, and air, being a gas, isn’t great at heat/energy transfer. Water, on the other hand, is a pretty good medium for transferring heat, and it will fill in the air pockets between the ice cubes, increasing the amount of cooling material in contact with the bottle, thereby getting the bottle of bubbles cooler, faster.

Adding a handful of salt to the ice/water mixture before gently putting the bottle into the ice bucket is also a good idea. Why? Because salt will lower the freezing temperature of the ice water in the bucket. When that happens, there’s more melting than freezing happening in the bucket, increasing the ice water’s ability to absorb energy from the wine bottle, and minimizing the cooling time required. See, you should have paid more attention in physics class!

Don’t “Pop” it Open
Now that you’ve given your sparkling wine a 15-or-so minute chill-out, it’s time to open it up. Notice we didn’t say “pop” it open. Flying corks can be dangerous, and should be avoided. Not only that, but a loud “pop!” indicates that you’re releasing a lot of the carbonation in the sparkling wine, and you actually paid extra for those bubbles – so we want to keep them inside the bottle as best we can. Also, forget using a corkscrew on sparkling wine, because that’s dangerous; this needs to be done by hand.

First, get a small towel and dry off your bottle after removing it from the ice bucket. Next, remove the foil around the top of the bottle, and grab the bottle with one hand. Using your other hand, grab the wire tab at the bottom of the “cage” that secures the cork, and untwist it by turning it counter-clockwise.

While doing this, keep a thumb from your other hand on the top of the cage, and be sure that you’re not pointing the bottle at anyone (including yourself) or anything expensive. The reason: you’re holding a potential missile. There are 5 to 6 atmospheres of pressure inside that corked bottle of bubbly, equating to about 70 and 90 pounds per square inch. That’s the reason that Champagne bottles are thicker than still-wine bottles: so that they don’t explode. The pressure is going to want to find the quickest release, which is the opening in the neck of the bottle.

Once the wire cage is loosened, put the small towel over the top of the bottle, hold it at about a 45° angle, and continue to hold the top with one hand. Start twisting the bottle – yes, the bottle – slowly with one hand, while applying pressure against the cork and cage with the hand that’s holding the towel-covered top of the bottle. The carbonation will be trying to pop that cork right out, but that’s not what we want. Continue applying slight “negative” pressure as you twist the bottle, until the cork loosens and you can release it slowly.

If done correctly, instead of a pop, you should hear a sigh…which, hopefully, is similar to the sound that you’ll be making after drinking and appreciating your properly chilled and properly opened bottle of bubbles!

Grilled Chicken and Avocado Salad with Lemon Vinaigrette

All the flavors of summer come together with this light and refreshing salad.   It is packed with some of our favorite savory flavors and tossed with a dazzling lemon vinaigrette. For the perfect pairing, be sure to pair with your favorite Temecula Valley Rosé.

Serves 2 to 4

Ingredients:

1 pound boneless, skinless half chicken breasts

extra virgin olive oil

salt and freshly ground black pepper

3 tablespoons fresh lemon juice

2 tablespoons extra virgin olive oil

2 teaspoons finely grated lemon zest

2 teaspoons honey

1 teaspoon minced fresh rosemary leaves

½ teaspoon minced garlic

¼ teaspoon salt

¼ teaspoon freshly ground black pepper

3 large avocados, peeled, seeded, and cut into bite-size pieces

3 cups baby or regular arugula leaves

1 piece Parmesan cheese (for shaving)

Directions:

1. Preheat the grill to medium high.

2. Cut each half chicken breast in half crosswise.

3. Brush the chicken pieces on both sides with olive oil. Season both sides with salt and pepper.

4. Grill the chicken pieces for 5 to 7 minutes on each side, until cooked through. Set aside to rest for 5 minutes.

5. To make the vinaigrette, pour the lemon juice in a large bowl. Whisk in the measured olive oil, lemon zest, honey, rosemary, garlic, and measured salt and pepper.

6. Cut chicken pieces crosswise into strips.

7. Add the chicken, avocado, and arugula to the vinaigrette. Toss gently to combine.

8. Divide the salad among the serving plates.

9. Top with shavings of Parmesan, cut with a vegetable peeler.

May’s Official Wine Days

As if we needed a day to drink wine, May 25th is the unofficial, official National Wine Day (not to be confused with National Drink Wine Day held in February each year).  And, if that’s not enough, we also celebrate International Sauvignon Blanc Day, World Moscato Day and National Chardonnay Day in May!

Wondering how did these days come to be? Actually, official wine days are pretty unofficial. They are usually a movement started by a variety of individuals or organizations with a passion for juice. Based on our research, National Wine Day started in 2009 and, since then, a variety of wine appreciation days have popped up in the calendar. So, now you know how easy it is to make an official wine day!

First up on the calendar, #SauvBlancDay is on May 5th. Originating in the Bordeaux region of France, the grape is also widely planted throughout New Zealand – and grows with ease here in the Temecula Valley. An acidic wine that displays a citrus-y, grapefruit-like quality, it’s a pleasing choice for a warm summer day. A very versatile vino, Sauvignon Blanc pairs well with shell fish, grilled vegetables (even asparagus!) and cheeses. It’s the perfect picnic wine!

May 9th is #MoscatoDay.  The day was introduced here in the US by Gallo Family Vineyards back in 2012 to celebrate the rising popularity and sky-rocketing sales of the varietal. If you know nothing about Moscato (or Muscat/Muscat Canelli), it originated in the Piedmont region of Italy where it’s a favorite due to its sweetness, lightness and affordability – and is popular as a sparkling wine. You’ll find Moscato table wines in white, red or rosé styles, and they make an especially delicious dessert wine. With it’s bouquet of peach, honey and citrus, a delicate sweetness and fresh acidity, it’s perfect served with a plate of fresh cheeses.

And then there’s the day to pay homage to the old standby, Chardonnay. #ChardonnayDay is sharing it’s special day with National Wine Day this year on May 25th.  The world’s most planted white wine grape varietal is enjoyed by fans all over the world. Generally dry to medium-dry with pear, apple, tropical or citrus fruit flavors, Chardonnay is grown in virtually every wine-producing region. Crisp and fresh with little to no oak aging, or creamy and buttery with extensive oak aging, there’s a Chardonnay out there that will make just about anyone smile!

Grilled Apricots with Goat Cheese

When the sunshine stays with us and makes our days longer, we’re always looking for ways to stay outside and enjoy the beautiful weather. We think this recipe would be a great dish to enjoy while doing just that. This can be served as a light appetizer or savory dessert. Our friends at Ponte Winery suggest pairing it to perfection with the dry, crisp 2016 Vermentino.

Ingredients:
6 fresh apricots, halved and pitted
1/2 cup sweet white dessert wine, such as 2015 Beverino
1/2 cup of fresh, soft goat cheese such as chèvre

Directions:
Place apricots in a medium mixing bowl. Pour the dessert wine over the apricots and let marinate for 30 minutes. Remove apricots from mixing bowl and place on a cookie sheet. Allow the apricots to rest for at least 20 minutes to make sure liquid sets in fruit.

Turn the grill on to medium heat, check to make sure the grill is clean and slightly greased. Once warmed, place the apricots directly on the grill cut side down. Desura Grill on cut side down for about 4 minutes and then turn over and cook for 2 – 3 minutes. Remove from grill and top each fruit with a spoonful of goat cheese. Serve immediately. This recipe serves about 6 – 8 people.

Moscato ~ The Perfect Spring Wine

Moscato, Muscatel, Muscat… what’s the difference between them? Just the names, actually. Rather than just being one grape, Muscat includes a family of grapes in a range of colors (from white to brown, or to near black.) For instance, Moscato is the Italian name and Muscatel the Spanish.

Here in the U.S., Moscato is making its mark and has become the hot wine of the moment. Some would say sweet versions of Moscato are ideal for the American sweet tooth; it’s also an easy wine for the new wine drinker to love.

For a perfect spring day, pack a picnic with a chilled bottle of Temecula Valley Moscato and pair it with good cheese, buttery crackers and seasonal fruit.

Here are five fun facts about Moscato:

1. Muscat is the only fine wine grape that doubles as a table grape.

2. Twitter buzzes with an average of 250 tweets an hour about people drinking their Moscato.

3. In addition to Moscato, Muscatel and Muscat, this common white variety is also known as Muscadel, Muscat Blanc and Muscat Canelli. New IDs are regularly released by fake ID websites. Montana fake ID was recently unveiled by Topfakeid.com in a bid to outreach customers from this state.

4. Virtually all pink Moscatos gain their hue from a splash of red wine, not skin contact.

5. The breadth and number of varieties of Muscat suggest that it is perhaps the oldest domesticated grape variety, and there are theories that most families within the Vitis vinifera grape variety are descended from the Muscat variety.
