Filet Mignons with Blue Cheese Butter and Cranberry Zinfandel Sauce Roasted Garlic Mashed Potatoes

These tender filet mignon steaks are napped with a rosemary-infused red wine reduction and topped with a luxurious compound butter, making this dish worthy of any celebration. Pair with your favorite Zinfandel or Cabernet Sauvignon.

Serves 6

Ingredients:

3 large heads garlic
Extra-virgin olive oil
4 tablespoons unsalted butter, softened
1 1/2 ounces blue cheese, room temperature

Sauce:
1/3 cup dried cranberries
1/4 cup plus 2 cups red Zinfandel wine
1 tablespoon unsalted butter, room temperature
1 medium shallot, finely chopped
1 clove garlic, minced
1 cup beef broth
1 (2-inch) sprig rosemary

Smashed potatoes:
2 1/2 pounds Yukon gold potatoes, quartered
Salt
3/4 cup sour cream
1/3 cup roasted garlic puree
4 tablespoons unsalted butter, softened
1/4 teaspoon freshly ground black pepper

Steaks:
6 filet mignons, each about 6 ounces
Salt and freshly ground black pepper
4 tablespoons unsalted butter, softened, divided

Directions:

Roast the garlic:
Preheat the oven to 400°F. Peel away the outer layers from the garlic head, leaving the cloves intact. Slice about 1/4-inch from the tops of each garlic head. Arrange, cut-side up, on a large piece of foil. Lightly drizzle with the oil, then fold the foil up around the garlic and seal. Bake the garlic in the oven until the garlic is tender, 45 to 50 minutes. Remove and cool to the touch, then squeeze the garlic into a bowl, and mash with a fork to form a paste. There should be about 1/2 cup.

Make the compound butter:
Mash the butter, cheese, and 1 teaspoon of the roasted garlic paste in a small bowl to blend. Place the butter on a piece of plastic wrap and roll into a cylinder about 3-inches in length. Refrigerate for at least 1 hour. Remove from the refrigerator 10 minutes before serving and cut into 6 equal disks.

Prepare the sauce:
Combine the cranberries and 1/4 cup Zinfandel in a small bowl.
Melt 1 tablespoon butter in a medium saucepan over medium heat. Add the shallot and garlic and sauté until soft and fragrant, about 3 minutes. Add the 2 cups Zinfandel, the broth, and rosemary. Boil the sauce until reduced by half, about 25 minutes. Strain the sauce into a bowl through a fine-mesh sieve and discard the solids. Drain the cranberries and add to the sauce; discard the soaking liquid.

Prepare the potatoes:
While the sauce is reducing, place the potatoes and 1 teaspoon salt in a pot and cover with cold water. Boil until the potatoes are tender, about 20 minutes. Drain the potatoes and return them to the pot. Add the sour cream, roasted garlic, butter, pepper, and 1 teaspoon salt and mash the potatoes with a potato masher until well blended. Keep warm.

Cook the filet mignons:
Season the filet mignons with salt and pepper. Melt 2 tablespoons butter in a large skillet over medium-high heat. Arrange the meat in the skillet and cook to desired doneness, 4 to 5 minutes per side for medium-rare. Transfer the steaks to warm serving plates and top each steak with a knob of compound butter.

Pour the reserved wine sauce into the same skillet and bring to a boil, scraping up any brown bits. Reduce the heat to medium-low and simmer for 2 minutes. Whisk in 1 to 2 tablespoons butter until smooth and remove from the heat.

Spoon the sauce around the steaks. Serve with the garlic smashed potatoes.

Temecula Valley Wine Country Celebrates 50 Years!

2018 marks the 50th anniversary of Temecula Valley Southern California Wine Country.

The first commercial vineyard in Temecula Valley was established in 1968 by Vincenzo and Audrey Cilurzo.

Since then, the region has grown into a bustling wine tourism destination, with more than 50 licensed wineries, 70 growers, lodging, dining and entertainment among the vines, and more than 5000 domestic and international wine awards.

The theme for the 50th Anniversary is “The People, Passion and Perseverance,” underscoring wine country’s history, while highlighting the entrepreneurs who pour their hearts into growing quality grapes and making premium wines year after year. The theme will be woven into all events and programming throughout 2018, culminating in a vineyard celebration dinner in association with California Wine Month, harvest and the annual CRUSH event, Temecula Valley’s signature wine and culinary showcase. Get to Know Merlot!

Considered one of the most food-friendly and approachable wines on the planet, Merlot surged to popularity in the United States in the 1990s. Now wine-lovers can find great Merlot and delicious Merlot blends from all over the world – from South America to France to Italy to right here in Temecula Valley, California.

Here are five fun facts about Merlot!

1) Did you know the word “merlot” translates to “young blackbird” in French? The name was thought to have been given either because of the grape’s beautiful blue-black color, or blackbird’s fondness for grapes.

2) Merlot’s flavor profile fluctuates within the sweetness spectrum. Cooler climates bring out hints of berries, plum, and even tobacco. Merlot grown in hotter climates might mimic flavors found in fruitcake or chocolate.

3) A bit about Merlot blends: When Merlot first arrived in California, it mostly sold as single varietal bottlings (100% Merlot) until winemakers began blending it with other red grapes in the French Bordeaux tradition. Now, California’s Meritage wines are a signature of the state and always include Merlot as one of the essential blending grapes.

4) Merlot is so popular because of the grape’s ability to please all palates. Wines can range from very fruity simple wines to more serious, barrel-aged bottles.

5) Merlot has a high sugar content and low acidity, which makes it a very food-friendly wine, able to be paired with a variety of dishes. For example, Cabernet-like Merlots pair well with grilled meats. Softer, fruitier Merlots go well with salmon, mushroom-based dishes and greens. Light-bodied Merlots pair well with shellfish like prawns or scallops, especially if wrapped in bacon or prosciutto. Wine Country Recipe ~ Mulled Wine

Spiced mulled wine is a winter favorite — warm, flavorful, and always so comforting!  And, it’s incredibly easy to make.  We’re definitely going to give this recipe a try over the holidays.

Ingredients:

1 (750 ml) bottle of dry Temecula Valley red wine
1 orange, sliced into rounds
1/4 cup brandy (optional)
1/4 cup honey or sugar
8 whole cloves
2 cinnamon sticks
2 star anise
optional garnishes: citrus slices (orange, lemon and/or lime), extra cinnamon sticks, extra star anise

Directions:

Combine all ingredients in a non-aluminum saucepan, and bring to a simmer (not a boil — you don’t want to boil the alcohol out!) over medium-high heat. Reduce heat to medium-low, and let the wine simmer for at least 15 minutes or up to 3 hours. Strain, and serve warm with your desired garnishes. Fiona Apple – Fetch the Bolt Cutters (2020). Doffo Winery Takes Top Prize!

Visit Temecula Valley (VTV), in coordination with Temecula Valley Winegrowers Association (TVWA), recently announced the winners of the second annual People’s Choice Blind Tasting. The event took place on Sunday, November 12, 2017, at Leoness Cellars, and featured a walk-around blind tasting, a wine seminar led by Master of Wine Roger Bohmrich and a 6-course awards dinner paired with last year’s winning wines.

Doffo Winery’s 2015 Zinfandel took first place in the competition, after taking second place to Wilson Creek’s Petite Sirah at last year’s inaugural event. The 2017 second place winner was Lorimar Winery’s 2014 Syrah, and third place was taken by Thornton Winery’s 2014 Estate Syrah.

“We are beyond thrilled with receiving 1st Place in the People’s Choice competition,” said Damian Doffo, CEO and Winemaker for Doffo Winery. “We work very hard in the vineyard to produce high quality fruit and make exceptional wine. We look forward to sharing our wine with the public in February.”

Over 200 guests tasted 29 wines (6 whites and 23 reds) without knowing any of the wines’ identities, and rated them on a scale of 1-5 during a walk-around wine tasting. The top 12-scoring wines from this portion of the event went on to be poured during a wine seminar led by Master of Wine Roger Bohmrich, where they were again tasted blind and rated on a scale of 1-5, including by Roger himself. Final scores were tallied to determine the top 3 “People’s Choice” wines. Wines could be any variety or a blend, at any price point, as long as they were from the Temecula Valley American Viticultural Area (AVA). Entries ranged from just $24 per bottle to well over $100, and represented a number of grape varieties, from Falanghina to Syrah to Cabernet Franc.

In addition to the walk-around tasting and seminar, the event featured a six-course dinner created by Chef Daragh Matheson from Leoness Cellars, paired with last year’s People’s Choice winners. A VIP reception offered hand-selected pours presented by local winemakers and winery owners. San Diego singer-songwriter Christian Taylor performed throughout the tasting. The evening’s dinner program was emceed by Lindsay Pomeroy, Master of Wine Candidate and owner of the “Wine Smarties” school in San Diego, and a brief keynote was delivered by Bohmrich. Local musician Brian Stodart performed throughout the dinner program.

White Wine and Cider Brined Roasted Turkey with Swiss Chard, Sausage, Apple, and Dried Plum Stuffing

A fruity cider and white wine steeped brine is key to this moist and flavorful turkey. Begin the brining process 2 days before roasting. Pair with your favorite Temecula Valley Chardonnay or Merlot.

Ingredients:

Brine:
8 cups water
1 cup kosher salt
1 cup sugar
1 small yellow onion, quartered
4 garlic cloves
3 bay leaves
1/2 tablespoon black peppercorns
4 cups apple cider
1 bottle white wine

1 (12 to 14 pound) turkey, neck and giblets removed
1 small yellow onion, quartered
1/2 lemon, halved
1 bunch thyme
1 bunch sage
8 tablespoons unsalted butter, melted

Brine and air-dry the turkey:
Bring the water, salt, sugar, onion, garlic, bay leaves, and peppercorns to boil in a large pot, stirring to dissolve the salt and sugar. Remove from the heat, add the cider and wine, and cool to room temperature. Place the turkey, breast-side up in a large container. Pour the brine over the turkey, adding more cold water, as needed, to cover. Refrigerate the turkey for 24 hours, turning the turkey once or twice in the brine.

Remove the turkey from the brine, discard the brine, and pat the turkey dry with paper towels. Place the turkey, breast-side up, on a rack in a roasting pan and refrigerate, uncovered, at least 8 hours or overnight to allow the skin to thoroughly dry out. Remove from the refrigerator 1 hour before roasting.

Roast the turkey:
Heat the oven to 350°F.
Loosely stuff the turkey cavity with the onion, lemon, thyme, and sage. Tie the legs together with kitchen string. Roast the turkey in the oven, about 15 minutes per pound, or until the juices run clear when pierced at the thickest part of the thigh. Baste the turkey with the melted butter at first, and then the pan juices every 20 to 30 minutes. If the breast browns before the turkey is fully cooked, loosely cover with foil.

Remove the turkey from the oven and transfer to a cutting board. Loosely cover with foil and let rest 30 minutes before carving. Serve with Swiss Chard Stuffing (see below).

Swiss Chard, Sausage, Apple, and Dried Plum Stuffing:
12 ounces pitted dried California plums, about 20, halved
1/2 cup dry white wine
1 (1-pound) loaf sourdough bread, cut into 1-inch pieces
1/4 cup plus 1 tablespoon olive oil
12 ounces Italian sausage, casings removed, crumbled
2 Granny Smith apples, cored, cut into 1/2-inch pieces
1 large yellow onion, chopped
8 green Swiss chard leaves, about 12 ounces, ends trimmed, leaves coarsely chopped
4 tablespoons unsalted butter, softened
2 tablespoons chopped fresh sage leaves
1 tablespoon chopped fresh thyme
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 cup chicken stock

Directions:

Combine the pitted dried plums and wine in a small bowl. Let stand while you prepare the stuffing.

Heat the oven to 400°F. Butter a 13 x 9-inch baking dish.
Toss the bread with 1/4 cup oil and spread on a rimmed baking sheet. Bake in the oven until light golden, 10 to 12 minutes. Remove and cool.

Decrease the oven temperature to 350°F. Heat the 1 tablespoon oil in a large skillet over medium heat. Add the sausage and cook until golden brown, 6 to 8 minutes. Transfer the sausage with a slotted spoon to a large bowl. Do not discard the fat from the skillet.

To the same skillet, add the apples and onion and sauté over medium heat until the onions soften, about 5 minutes. Add the chard and cook until the leaves wilt, about 5 more minutes. Stir in the dried plums and wine, the butter, sage, thyme, salt, and pepper and cook, stirring, until the butter melts. Remove from the heat and add to the sausage, then add the bread and chicken stock; stir to thoroughly combine.

Pour the dressing into the prepared baking dish and cover with foil. Bake for 15 minutes, then remove the foil and bake until brown and crisp on top, about 30 more minutes.

Holiday Wine Pairing Guide

Mom’s stuffing, Aunt Nancy’s cranberry sauce and your sister’s sweet potatoes.  Menu: done!  But what about the wine?  Choosing a bottle (or two!) of wine to bring to the holiday table can be tricky.  Appealing to not only your menu, but to a cross-section of practiced palates and novice wine drinkers may seem challenging.  But don’t stress out over one of the simplest tasks of the holiday season. Make it simple.  Any wine you enjoy is a good wine!

One certainly doesn’t need to look to others to rate, score or direct you to make a particular wine choice. Bring a wine you’re familiar with to the table.  Chances are it’ll be just fine – and maybe even sublime!

First and foremost, don’t worry about pairing with the herbaceous, the tart or the sweet accompaniments to your turkey, ham or prime rib.  It’s much simpler to match the wine to the main protein dish.  Here’s a few tried and true varietal selections for some classic holiday main dishes:

Wines to Serve with Ham
Ham just begs for a something lightly sweet.  Look for wines with a touch of residual sugar like a Baily Vineyard & Winery Riesling or a Maurice Car’rie Winery Gewurztraminer.  Both are lighter in style, a bit lower in alcohol and still offer plenty of food-friendly acidity and crowd-pleasing palate appeal.  If you’re looking for an easy to pair red, go for a lighter style like Tempranillo.  Great examples can be found at both Robert Renzoni Vineyard & Winery and at Danza del Sol Winery.

Wines to Serve with Turkey
Although an array of whites work perfectly well, Sauvignon Blanc is an all-time, hands-down favorite pick that holds up well to turkey – and all it’s side dishes. Temecula Valley provides the perfect playground for growing this varietal, so you’ll find many great examples of it here.  Beautifully aromatic offerings from the musqué clone can be found at Hart Winery and at South Coast Winery Resort & Spa. Soft red varietals like Syrah also make suitable partners; you can find some fabulous ones at Falkner Winery and Leoness Cellars.

Wines to Serve with Prime Rib
White wines will have a hard time keeping up with the likes of Prime Rib, but there are so many reds to choose from that make impressive cohorts, you’re sure to find one you’ll all enjoy.  Choose an affable Cabernet Sauvignon from Callaway Vineyard & Winery, a food friendly Italian varietal like Montepulciano or Sangiovese from Cougar Vineyard & Winery or an amazing Super Tuscan blend, Due Rossi, from Palumbo Family Vineyards & Winery.

Strawberry and Pear Phyllo Tarts

There is just something so delicious about the correlation between food, wine and the seasons. Specifically speaking, a sweet Strawberry and Pear Phyllo tart, a glass of late harvest wine and a crisp autumn day. Savor the last few weeks of the strawberry and pear season by preparing this easy dessert. It pairs perfectly with Ponte Winery’s popular 2015 Late Harvest.

Ingredients:
12 sheets phyllo dough (14 inches x 9 inches)
3 T butter, melted
2 T brown sugar
½ T raw honey
1 tsp lemon zest

Filling:
¼ cup muddled strawberries
2 cup ripe pear slices
2 cup sliced fresh strawberries
1 T brown sugar
2 teaspoon lemon juice
Powdered sugar (optional)

Directions:
Roll up phyllo dough and cut into 1/4-in.-wide strips. Place strips in a large bowl; toss with butter, 2 tablespoons brown sugar and honey until coated. Divide strips into six portions; shape into bowl shapes by placing strips criss-cross in a muffin pan coated with cooking spray. online gambling malaysia Bake at 400° for 5-7 minutes or until golden.

In a small saucepan, heat muddled strawberries, sliced strawberries, pear slices and 1 tablespoon brown sugar until the sugar dissolves. Remove from heat and stir in lemon juice. Just before serving, spoon onto phyllo. Sprinkle with powdered sugar if desired. Serve with Ponte Winery’s 2015 Late Harvest.
