Grilled Five-Spice Chicken with Cucumber Peanut Salad

Vietnamese chefs introduced Californians to the delights of five-spice chicken, and the dish is now entrenched in the Golden State repertoire. A cool, crunchy, lime-laced cucumber salad provides a refreshing contrast to the highly seasoned chicken. The marinade makes the chicken skin extra-crisp and tasty, so purchase skin-on thighs if possible. Pair with your favorite Temecula Valley Merlot!

Serves 4

Ingredients:

Marinade 

  • 2 tablespoons soy sauce 
  • 2 teaspoons Thai or Vietnamese fish sauce  
  • ¼ teaspoon five-spice powder 
  • 3 cloves garlic, finely minced 
  • 1 small shallot, finely minced 
  • 2 teaspoons sugar
  • 4 chicken thighs, bone in, skin on, about 1-1/2 pounds (680 g)

Cucumber Peanut Salad 

  • 1 English cucumber, halved lengthwise and thinly sliced 
  • 1 large carrot, coarsely grated 
  • ½ small sweet red onion, thinly sliced 
  • 2 tablespoons fresh lime juice with some pulp 
  • 2 tablespoons water 
  • 1 tablespoon Thai or Vietnamese fish sauce  
  • 1 tablespoon sugar 
  • 1 small clove garlic, finely minced 
  • ½ small jalapeño chili, minced (remove seeds first, if desired) 
  • ¼ cup (10 g) coarsely chopped cilantro 
  • ¼ cup (30 g) chopped roasted unsalted peanuts  
  • Lime wedges 

Directions:

Prepare the marinade: Combine the soy sauce, fish sauce, five-spice powder, garlic, shallot, and sugar and whisk until the sugar dissolves. Put the chicken thighs in a glass baking dish or other container just large enough to hold them. Pour the marinade over the thighs and turn them to coat all over. Cover and refrigerate for 8 to 12 hours, turning once halfway through. 

 Prepare the cucumber salad: Put the cucumber, carrot, and onion in a bowl and toss gently to mix. In a small bowl, combine the lime juice, water, fish sauce, sugar, garlic, and chili. Whisk until the sugar dissolves, then pour the dressing over the salad and toss gently. Add the cilantro and peanuts and toss again. Taste and adjust the seasoning. 

 Prepare a hot charcoal fire or preheat a gas grill to high. Remove the chicken from the marinade and place skin side down on the grill. Brush the flesh side with any marinade in the baking dish. Cook on both sides until the skin has browned and crisped and the chicken juices run clear, not pink, when probed at the bone, about 20 minutes.  

 Divide the cucumber salad and the chicken among 4 dinner plates. Garnish with lime wedges.

Monte De Oro Winery ~ 2016 Merlot – A medium+ aroma intensity of freshly picked raspberries, bing cherries, and strawberries with vanilla, cocoa bean, red bell pepper, red flowers, clove, cinnamon and charred oak.

Thornton Winery ~ 2016 Merlot – Merlot has cherry, black berry currant and blueberry notes along with a fruit-driven entry that is complemented by oak barrels from France, Eastern Europe and North America.

Celebrate Mother’s Day in Wine Country!

TheMothers Day 2 ancient Greeks paid annual homage to Cybele, the mother figure of their gods, the Romans dedicated an annual spring festival to the mother of their gods, and in 16th century England, a celebration called “Mothering Sunday” was inaugurated — a Sunday set aside for visiting one’s mother.  When President Woodrow Wilson signed a bill back in 1914 designating the second Sunday in May as a legal holiday to be called “Mother’s Day”, he dedicated the day “to the best mother in the world, your mother.”

Show your Mom how special she is!  Lunch, brunch, dinner – or just a day of wine tasting – is surely one way to get on her good side.  And remember, you’re the reason she drinks wine in the first place…

May 5th is Cinco de Vino Day!

cinco de mayoOh me, oh my, oh!  It’s Cinco de Vino!  Okay, so it’s really Cinco de Mayo, but come on!  Loving all things wine, what else are we gonna’ talk about?

Mexican food with wine, you say?  If you’ve never ventured into pairing wine with your favorite Mexican food, trust us.  It’s as fun as it is easy!

Let’s start with a little hint: alcohol intensifies the heat of chiles, and chiles intensify the alcohol, so choosing lower alcohol wines is the first step.  The second step is to choose those that are crisp with acidity.  They’re best suited to complement the complex flavors and spices of great Mexican cuisine.  And thirdly, always pair the wine with the sauce, not the protein. i.e., consider the ingredients in your dishes.  In general, red wines will work best with earthy chipotle, pasilla or adobo chile sauces – or if it’s all about that cheese!  White wines will work better with lime, citrus, tomatillo and cilantro or herbal sauces. Cinchy, huh?

Some particularly good white varietals to consider might include Sauvignon Blanc, Pinot Grigio, an Albarino – or even a dry Riesling.

Red wine lovers should try Tempranillo, Sangiovese or Malbec, a luscious Zinfandel or even a supple Syrah.

But, like we always say, wine guidelines and suggested pairings are just that – suggestions. The right wine for you is the one you like best!  We just recommend that if you’re entertaining, play it safe and have a couple of different options available.

There’s a Temecula Valley wine out there that will make your Mexican fiesta excelente and take your meal from tasty to sabroso!

Bubbles 101 – We want to burst your bubble with our champagne class / Oak Mountain Winery’s Sparkling Wine Class will have you taste three of our handcrafted sparkling wines made and bottled here in Temecula. You will be served 3 of our sparkling wines paired with artisanal cheeses. Learn fun facts you always wanted to know about sparkling wines and champagne.

Blending Reds – Create, bottle and label your very own blend / In our Blending Class, you get to be the Winemaker! You will be supplied with three of Oak Mountain’s red wines, Cabernet Sauvignon, Cabernet Franc and Merlot, tasting notes, a measuring flask and pipette, three wine glasses for sampling your creation and a “cheat sheet” provided by our own winemaker to help you with the process. You will have the option to bottle your custom blend of wine for an additional $29. We will then pop in a cork and add a personalized label and you’ll take home wonderful memories – as well as a one-of-a-kind bottle of wine.

Wine Tasting for Dummies 101 / Our beginners class for Wine Tasters. This is a good class to take if this is your first visit to a winery and want to know the basics of wine tasting. You will taste three wines paired with delicious gourmet cheeses and dark chocolate toffee. You will also get to sample eight of our infused Avocado Oils and Balsamic Vinegars that are only available at Oak Mt. Winery.

Rhone Wine Class 201 / Our second, more advanced class after taking Wine Tasting 101 is our Rhone Wine Tasting Class 201. Learn how these grapes are grown here in the valley and how wine is made, while tasting varietals from different areas in the Rhone region of France. Just like the 101 class, you’ll get 3 wine tastings and 8 tastings of Avocado Oil and Balsamic Vinegars.

Bordeaux Wine Class 201 / You will learn how these grapes are grown and how they are harvested and processed, while tasting Oak Mountain wines from different areas in the Bordeaux region of France.
